Mixing Up Breakfast With This Colorful Dish

Sweet Potato Breakfast Hash     

Whether you want to use up some of the food that’s been hanging out in your kitchen, or you want a change-up from your normal breakfast routine, this Breakfast Hash will add a spark to your sunrise rituals.

Loaded with nutrient rich ingredients like sweet potatoes, eggs, and spinach, you’re sure to feel energized and ready to conquer the day.

The goodies you’ll need:

  • (1 serving size, double if needed)
  • 1 Sweet potato cut into chunks
  • 4 oz. of ground turkey
  • 1 egg
  • A handful of spinach
  • Salt & Pepper
  • Cinnamon
  • Sriracha

Start by heating your skillet over medium heat. Once hot, add ground turkey and begin breaking it apart with a spatula. Continue to cook until it turns almost light brown and then set it aside in a bowl.

Once you’ve set aside the turkey, with the same skillet at the same temperature, start to cook the sweet potatoes. Add the salt, pepper, and cinnamon. Cook the sweet potato chunks until they’ve all become soft. Once achieved, add the turkey back in and mix it all together.

Lower the temperature to low-medium heat. Break open the egg and add it into the sweet potato and turkey mix. Mix until the egg starts to cook slightly. Once achieved, add a handful of spinach and mix it all together. Cook for another 5 minutes or until the spinach has wilted.

Add more salt and pepper if you wish.

Serve in a bowl and top with Sriracha Sauce for a kick.
